Ingredients

2 cups ditalini pasta

2 cups fresh corn kernels

1/2 cup mayonnaise

1/4 cup sour cream or Greek yogurt

1/2 red onion, finely chopped

1/2 cup cotija cheese, crumbled

1/4 cup fresh cilantro, chopped

1 lime, juiced

1 tsp chili powder

Salt to taste

Instructions

1. Cook ditalini pasta al dente, drain and rinse with cold water.

2. Roast fresh corn kernels in a skillet until charred and smoky.

3. In a small bowl, whisk mayonnaise, sour cream, lime juice, and garlic powder.

4. In a large bowl, mix pasta, corn, red onion, cilantro, cotija, and dressing.

5. Toss gently to coat evenly, chill for an hour before serving.
