300g pasta (linguine or penne)
250g shrimp, peeled and deveined
200g mushrooms, sliced
2 cloves garlic, minced
1 cup heavy cream (or coconut milk for dairy-free)
2 tbsp butter or olive oil
½ cup grated parmesan (optional)
Salt and pepper to taste
1. Cook pasta in salted water until al dente. Drain and reserve 1 cup pasta water.
2. Meanwhile, clean and slice mushrooms, peel and devein shrimp if needed.
3. In a large pan, sauté mushrooms in butter until golden. Add garlic and cook briefly.
4. Pour in cream and a splash of pasta water. Simmer until sauce thickens.
