12 oz tri-colored rotini pasta
8 oz mini pepperoni
1 cup cherry tomatoes, halved
1 cup mozzarella pearls
4 oz sliced black olives
½ cup grated parmesan cheese
1¼ cup Italian dressing
Instructions
1. Cook pasta according to package instructions until al dente. Rinse under cold water and chill for 30 minutes.
2. In a large bowl, combine cooked pasta, mini pepperoni, tomatoes, olives, mozzarella pearls, and parmesan.
3. Pour Italian dressing over the mixture just before serving and toss well.
4. Refrigerate until ready to serve. Stir before serving if chilled for long.
Notes
Use turkey pepperoni or whole wheat pasta for a lighter version.
Keep dressing separate if prepping in advance.
Add bell peppers, cucumbers, or red onion for extra crunch and flavor.
