This colorful pasta salad with pepperoni is perfect for potlucks, BBQs, or weekday dinners. It’s packed with bold flavor and easy to prepare in under an hour.

Ingredients

  • 12 oz tri-colored rotini pasta
  • 8 oz mini pepperoni
  • 1 cup cherry tomatoes, halved
  • 1 cup mozzarella pearls
  • 4 oz sliced black olives
  • ½ cup grated parmesan cheese
  • 1¼ cup Italian dressing

Instructions

  • 1. Cook pasta according to package instructions until al dente. Rinse under cold water and chill for 30 minutes.
  • 2. In a large bowl, combine cooked pasta, mini pepperoni, tomatoes, olives, mozzarella pearls, and parmesan.
  • 3. Pour Italian dressing over the mixture just before serving and toss well.
  • 4. Refrigerate until ready to serve. Stir before serving if chilled for long.
