This refreshing Mexican macaroni salad combines elbow pasta, chicken ham, fresh veggies, and a creamy lime mayo dressing. Perfect for any occasion.

Ingredients

  • 14 to 16 oz small to medium elbow macaroni
  • 1 1/2 Tbsp chicken bouillon powder
  • 16 oz smoked or pressed deli chicken ham
  • 1 to 2 scallions, chopped
  • 1 celery stick, diced
  • 1/2 cup pickled carrots, diced
  • 11 oz canned corn, drained
  • 1 cup lime mayo
  • 1/2 cup sour cream
  • 1/3 cup pickling liquid from carrots
  • 2 tsp Maggi seasoning sauce
  • Salt & pepper to taste

Instructions

  • 1. Boil elbow macaroni in water with chicken bouillon powder. Drain and rinse with cold water.
  • 2. Chop chicken ham, scallions, celery, and pickled carrots.
  • 3. In a bowl, whisk together lime mayo, sour cream, pickling liquid, Maggi sauce, salt, and pepper.
  • 4. Combine cooked macaroni, veggies, ham, and corn in a large bowl.
  • 5. Pour dressing over pasta mixture and toss gently until coated.
  • 6. Chill salad for at least 1 hour before serving.
  • 7. Garnish with extra scallions or fresh lime juice if desired.
