1.5 lbs chicken breasts, cubed
3 tablespoons olive oil
2 lemons, zested and juiced
3 cloves garlic, minced
1 teaspoon salt
0.5 teaspoon pepper
1 teaspoon dried oregano
1.5 cups white rice
3 cups chicken broth
2 cups broccoli florets
1 yellow onion, diced
0.5 cup grated Parmesan cheese
2 tablespoons butter
0.25 cup fresh parsley
1. Marinate cubed chicken in lemon, oil, garlic, and herbs for 20 minutes.
2. Sear chicken in a skillet until golden; remove from pan.
3. Sauté onion in butter, add rice and toast for two minutes.
4. Add broth and simmer covered for 12 minutes.
