8 oz noodles
2 cups grape tomatoes
2 mini English cucumbers
1 cup arugula
1/2 cup mozzarella pearls
1/4 cup + 2 tbsp olive oil
3 tbsp hot honey
1/2 lemon, juiced 1/2 tsp Italian seasoning
1/2 tsp red pepper flakes
1/4 tsp black pepper
1/2 tsp salt
1. Cook the noodles according to package. Drain and chill.
2. Chop tomatoes and cucumbers into bite-sized pieces.
3. In a bowl, whisk together olive oil, hot honey, lemon juice, and seasonings.
4. Add cooled pasta to dressing. Toss.
5. Fold in tomatoes, cucumbers, arugula, and mozzarella. Serve chilled or room temp.
