10 cups chicken broth

1 onion, chopped

1 cup sliced celery

1 cup sliced carrots

¼ cup snipped parsley

½ teaspoon cracked black pepper

½ teaspoon dried thyme leaves

1 bay leaf

¾ pound chicken, cut into cubes

2 cups cooked rice

2 tablespoons lime juice

Lime slices for garnish

Instructions

1. Combine chicken broth, onion, celery, carrots, parsley, pepper, thyme, and bay leaf in a pot and bring to a boil.

2. Reduce heat to low and simmer until vegetables begin to soften, about 15 minutes.

3. Stir in the cubed chicken and simmer until cooked through, about 5 to 10 minutes.

4. Remove and discard the bay leaf.

5. Stir in the cooked rice and lime juice.

6. Cook and stir for 1 minute until the rice is heated through.
