This fresh and vibrant Greek tortellini pasta salad combines tender cheese tortellini with crisp veggies, feta, and bold Greek dressing — a perfect dish for picnics, potlucks, or light meals.

  • 1 (16 ounce) package fresh cheese tortellini
  • 1 ½ cups chopped grape tomatoes
  • 1 ½ cups chopped cucumbers
  • 1 medium green bell pepper, chopped
  • 1 medium red bell pepper, chopped
  • ⅓ cup chopped red onion
  • ⅓ cup Kalamata olives
  • 1 (4 ounce) package crumbled feta cheese
  • 1 cup Greek salad dressing

Instructions

  • 1. Bring a large pot of lightly salted water to a boil. Cook the tortellini until tender but still firm, about 6–7 minutes. Drain well.
  • 2. In a large bowl, combine the cooked tortellini with tomatoes, cucumbers, bell peppers, red onion, olives, and feta cheese.
  • 3. Pour in the Greek salad dressing and mix thoroughly until well coated.
  • 4. Chill in the refrigerator for at least 2 hours before serving.

Notes
