Crispy, cheesy homemade gluten-free pizza rolls that are easy to make, freezer-friendly, and perfect for parties or snacks.

Ingredients

1 cup gluten-free flour blend

1/2 teaspoon xanthan gum

1 teaspoon baking powder

1/2 teaspoon kosher salt

3/4 cup nonfat Greek yogurt

2 tablespoons lukewarm water

1/2 cup tomato sauce

4 oz mozzarella cheese, diced

1 tablespoon heavy cream or egg wash for brushing

Instructions

1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.

2. In a large bowl, whisk together gluten-free flour, xanthan gum, baking powder, and salt.

3. Add Greek yogurt and water, mixing until a smooth dough forms.

4. Roll out the dough 1/4-inch thick and cut into rectangles about 2.5×1.5 inches.

5. Add a teaspoon of tomato sauce and diced mozzarella to each rectangle.

6. Fold over the dough and press edges firmly to seal; cut small vents on top.

7. Brush each roll with heavy cream or egg wash.

8. Bake for 15–18 minutes until golden brown and crisp.

9. Cool slightly before serving.

Notes

Avoid overfilling to prevent leaks.

Use diced cheese for best results.

Freeze unbaked rolls for up to 2 months and bake directly from frozen.

For dairy-free, use vegan yogurt and cheese alternatives.
