1 cup chocolate (60% cacao or higher), chopped

4 tablespoons unsalted butter

1/4 cup liquid sweetener (corn syrup or date syrup)

4 cups puffed rice cereal (plain)

Pinch of flaky sea salt (optional)

Instructions

1. Gently melt the butter and liquid sweetener in a saucepan over low heat until the butter is just dissolved. Remove from heat and immediately stir in the chopped chocolate until smooth and glossy.

2. Place the puffed rice in a large mixing bowl. Slowly drizzle the warm chocolate mixture over the rice, folding gently with a spatula until every grain is coated without crushing the cereal.

3. Allow the mixture to cool slightly (about 5 minutes). Form the mixture into small, uniform balls and place them on a parchment-lined baking sheet. Chill in the refrigerator for at least 30 minutes, or until fully set.

Notes

Use high-quality dark chocolate for the best flavor.

For a great shine, reserve a small handful of chopped chocolate to stir in after the initial melting (a simple form of seeding).
