Ingredients

  • 12 oz tri-color rotini pasta
  • 1 cup diced red bell pepper
  • ½ cup chopped shallots
  • ½ cup sliced black olives
  • 1 cup diced mozzarella cheese or dairy-free option
  • 1 cup cooked turkey sausage or plant-based substitute
  • ¼ cup chopped parsley
  • ½ cup thinly sliced basil
  • Salt to taste

Instructions

  • 1. Cook pasta according to package directions. Rinse with cold water and set aside.
  • 2. Combine chopped vegetables, cheese, sausage, and herbs in a large bowl.
  • 3. Blend all dressing ingredients until creamy and smooth.
  • 4. Pour the dressing over the pasta mix and toss well.
  • 5. Cover and chill for at least 30 minutes before serving.
  • 6. Stir and refresh with extra dressing if needed.
