This creamy broccoli pasta recipe uses no cream. Just broccoli, garlic, olive oil, and parmesan for a healthy and comforting dish.
3 Broccoli heads (800g)
2 tablespoons Olive oil
2 Garlic cloves, crushed
1/3 cup (30g) Parmesan or Pecorino cheese
Black pepper to taste
300g Spaghetti or pasta of your choice
1. Fill a large pot with water, add 1 tablespoon of salt and bring to a boil. Add chopped broccoli and cook for 3–4 minutes.
2. Drain the broccoli and divide into 3/4 and 1/4 portions.
3. In the same pot, cook the pasta according to package instructions.
4. Heat olive oil in a large pan over medium heat. Add crushed garlic and cook for 2 minutes.
5. Add 3/4 of the blanched broccoli and cook for 2 more minutes. Add 1/2 cup of pasta water and blend until smooth.
6. Return sauce to the pan over medium heat. Add remaining broccoli, salt, black pepper, and drained pasta.
7. Add 1/4 cup of pasta water and toss until combined. Stir in grated cheese until melted and creamy.
8. Serve immediately.
Add chili flakes for extra flavor.
Use whole wheat pasta for more fiber.
Vegan option: substitute cheese with nutritional yeast.
