A nostalgic holiday classic, Grandma’s Cranberry Orange Gelatin Salad combines tart cranberries, sweet pineapple, and crunchy pecans with a silky cream cheese topping.
6 oz raspberry flavored gelatin mix
2 cups boiling water
16 oz whole berry cranberry sauce
8 oz crushed pineapple, undrained
1 cup chopped celery
1 cup chopped pecans
1 tsp orange zest
4 oz cream cheese, softened
0.5 cup whipped topping
1. Dissolve the raspberry gelatin completely in boiling water using a large mixing bowl.
2. Incorporate the cranberry sauce and undrained crushed pineapple into the liquid.
3. Add the chopped celery, pecans, and orange zest, stirring until evenly distributed.
4. Transfer the mixture into a decorative mold or glass serving dish.
5. Refrigerate for a minimum of eight hours or until the mold is completely firm.
6. Whip softened cream cheese with half of the whipped topping until smooth.
7. Fold in the remaining whipped topping until light and airy.
8. Apply the creamy layer to the top of the set gelatin before serving.
Ensure the cream cheese is at room temperature for a smooth topping.
Do not drain the pineapple juice; it is needed for the gelatin set.
Use a microplane for the orange zest to avoid the bitter white pith.
