1 tablespoon olive oil
12 ounces chicken sausage (sliced)
2 cups sliced mushrooms
4 cups spinach, chopped
2 cups marinara sauce
1/2 cup goat cheese

Instructions
1. Cook pasta in salted water until al dente. Reserve 1/4 cup of pasta water before draining.
2. Heat olive oil in a large skillet over medium heat. Add sliced chicken sausage and cook until browned, 4–5 minutes.
3. Add mushrooms and cook until softened, about 2 minutes. Stir in spinach and cook until wilted.
4. Reduce heat. Add marinara sauce, drained pasta, and goat cheese. Mix until creamy.
5. Add reserved pasta water as needed to thin sauce. Season with salt and pepper.
6. Serve warm with optional toppings.
