Marry Me Chicken Pasta is the ultimate creamy garlic parmesan pasta with tender chicken and sun-dried tomatoes, ready in just 30 minutes.

Ingredients

  • 8 ounces uncooked pasta
  • 2 tablespoons butter
  • 1/2 tablespoon flour
  • 34 garlic cloves, minced
  • 1 tablespoon tomato paste
  • 1/3 cup chicken broth
  • 1 cup heavy or whipping cream
  • 1/3 cup sun-dried tomatoes
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon crushed red pepper flakes
  • 2 cups cooked rotisserie chicken, shredded
  • 1/3 cup freshly grated parmesan (plus more for serving)
  • 1 small handful fresh basil, torn or chopped
  • Salt & pepper to taste

Instructions

  • 1. Boil a pot of salted water and cook pasta al dente; reserve some pasta water.
  • 2. In a large skillet, melt butter over medium heat. Add flour and whisk for 1 minute to make a roux.
  • 3. Stir in garlic and tomato paste; cook until fragrant.
  • 4. Pour in chicken broth and simmer briefly.
  • 5. Lower heat and whisk in heavy cream. Add sun-dried tomatoes, oregano, and red pepper flakes.
  • 6. Add shredded rotisserie chicken and parmesan. Stir until sauce thickens.
  • 7. Toss cooked pasta into sauce; add reserved pasta water if needed.
  • 8. Garnish with fresh basil and extra parmesan. Serve immediately.

Notes

  1. Use full-fat heavy cream for the best sauce texture.
  2. Swap rotisserie chicken for seared fresh chicken if you prefer.
  3. Store leftovers in an airtight container in the fridge for up to 3–4 days.
  4. Reheat gently with a splash of cream or broth to restore creaminess.
