16 oz farfalle (bow tie pasta)
5 oz feta cheese, crumbled
11 oz cherry tomatoes, halved
6 fresh basil leaves, thinly sliced
1/4 cup fresh lemon juice
1/4 cup extra virgin olive oil
2 tbsp whole grain mustard
1 tbsp minced garlic
Salt and cracked black pepper, to taste
Instructions
1. Cook bow tie pasta in salted boiling water until al dente.
2. Drain and rinse with cold water to stop cooking.
3. In a small bowl, whisk together lemon juice, olive oil, mustard, and garlic.
4. Add cooled pasta to a large bowl and pour in the dressing.
5. Fold in cherry tomatoes, feta cheese, and basil.
6. Season with salt and pepper to taste.
7. Cover and chill for at least 2 hours before serving.
Notes
Use freshly squeezed lemon juice for best flavor.
Chill the salad before serving to enhance taste.
Add chickpeas or grilled vegetables for extra protein and texture.
