A refreshing and easy bow tie pasta salad tossed with lemon vinaigrette, cherry tomatoes, fresh basil, and crumbled feta. Perfect for picnics, potlucks, and light meals.

Ingredients

  • 16 oz farfalle (bow tie pasta)
  • 5 oz feta cheese, crumbled
  • 11 oz cherry tomatoes, halved
  • 6 fresh basil leaves, thinly sliced
  • 1/4 cup fresh lemon juice
  • 1/4 cup extra virgin olive oil
  • 2 tbsp whole grain mustard
  • 1 tbsp minced garlic
  • Salt and cracked black pepper, to taste

Instructions

  • 1. Cook bow tie pasta in salted boiling water until al dente.
  • 2. Drain and rinse with cold water to stop cooking.
  • 3. In a small bowl, whisk together lemon juice, olive oil, mustard, and garlic.
  • 4. Add cooled pasta to a large bowl and pour in the dressing.
  • 5. Fold in cherry tomatoes, feta cheese, and basil.
  • 6. Season with salt and pepper to taste.
  • 7. Cover and chill for at least 2 hours before serving.

Notes

  • Use freshly squeezed lemon juice for best flavor.
  • Chill the salad before serving to enhance taste.
  • Add chickpeas or grilled vegetables for extra protein and texture.
