This creamy Boursin pasta combines garlic herb cheese, roasted cherry tomatoes, and tender pasta for a rich, comforting dinner ready in under 40 minutes.
8 ounces short pasta (farfalle, rotini, or fusilli)
1 (5.3-ounce) package Boursin cheese (Garlic & Fine Herbs)
2 pints cherry or grape tomatoes
1/4 cup thinly sliced red onion
3 garlic cloves, minced
3 tablespoons olive oil
1/2 teaspoon dried oregano
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
1/4 cup fresh basil, sliced
Parmesan cheese for garnish
1. Preheat oven to 400°F (200°C). Place the Boursin cheese in the center of a 9×13-inch baking dish and surround it with cherry tomatoes, onion, and garlic.
2. Drizzle olive oil over everything, then season with oregano, salt, and pepper. Toss vegetables to coat.
3. Bake for 25–30 minutes, until tomatoes burst and cheese softens.
4. Meanwhile, cook pasta in salted water according to package directions. Reserve 1/2 cup pasta water.
5. Remove the baking dish from the oven and stir the melted cheese and roasted tomatoes into a creamy sauce.
6. Add cooked pasta and toss to coat, adding splashes of reserved pasta water until smooth and glossy.
7. Stir in fresh basil and top with Parmesan cheese. Serve immediately.
Reserve pasta water to adjust the sauce consistency.
