This creamy Boursin pasta is a quick one-pan dinner with roasted cherry tomatoes, garlic, and your favorite pasta. Perfect for busy weeknights or cozy meals.

Ingredients

  • 1 package of Boursin cheese
  • Cherry tomatoes (as many as you like or can harvest)
  • Extra virgin olive oil (generous drizzle)
  • 1 clove of freshly minced garlic
  • Kosher salt (a big pinch)
  • Freshly ground black pepper (a good amount)
  • Optional:
  • Red pepper flakes or
  • Fresh jalapeños (chopped)
  • Fresh basil (for garnish)
  • Grated Parmesan cheese (for garnish)
  • Pasta of your choice (e.g. penne, rotini, spaghetti)
  • 3/4 cup reserved pasta water

Instructions

1. Lightly spray or oil a casserole or baking dish

2. Place 1 package of Boursin cheese in the center and surround it with cherry tomatoes

3. Drizzle generously with olive oil

4. Add 1 minced garlic clove, a big pinch of kosher salt, and freshly ground black pepper

5. Optional: Add chopped jalapeños or red pepper flakes

6. Preheat oven to 400°F and bake the dish for 20 minutes

7. Boil your pasta in salted water and reserve 3/4 cup of pasta water

8. Smash the roasted tomatoes carefully with a masher

9. Add cooked pasta to the dish and stir everything together

10. Add reserved pasta water slowly for desired creaminess

11. Garnish with fresh basil and Parmesan cheese, then serve hot

Notes

  • Use orzo for a risotto-style version
  • Add sautéed spinach or grilled chicken to customize
  • Store leftovers in an airtight container for up to 3 days
