This tested and easy recipe for Baked Cranberry Brie Bites features flaky puff pastry and a perfect blend of sweet cranberry and creamy Brie. It’s the ultimate holiday appetizer.
1 sheet (about 10–12 oz) frozen puff pastry, thawed
1 (8 oz) wheel of Brie cheese
1/2 cup whole-berry cranberry sauce
1 egg, beaten (for egg wash)
Optional: Chopped pecans or walnuts, drizzle of honey, or fresh thyme for garnish
1. Preheat oven to 400°F (200°C). Lightly spray a standard 12-cup muffin tin.
2. Cut the Brie into 12 equal small cubes or wedges. Place the cut pieces in the freezer for 10–15 minutes.
3. Roll out the thawed puff pastry sheet and cut into 12 circles or squares (3–4 inches wide).
4. Press one piece of dough into each cup of the muffin tin.
5. Place one chilled cube of Brie inside the dough cup.
6. Top the Brie with approximately 1 teaspoon of the cranberry sauce.
7. Brush the exposed edges of the dough with the beaten egg wash.
8. Bake for 12–15 minutes, or until the pastry is puffed and golden brown.
9. Let the bites cool in the muffin tin for 5 minutes before gently removing them to a serving platter.
